Fruit is sourced from the Amadio Vineyard located in the Adelaide Hills near Kersbrook. This vintage is the second crop from a graft on to Semillon. Harvested around 12.0 baume, the fruit was taken to the winery where it was simply crushed, pressed off skins with no cut, fermented in tank to dry. Cold settled, stabilized and filtered before putting to bottle. All within 4 months of pick. No added acid. No fining. Vegan friendly.

The origin of this wine is from Italy. Yes it is the same name as cheese and apparently, was named due to the shepherds allowing the sheep to graze on this commonly grown variety. This would have to be one of my favourite white wines of the vintage. So much going on. Amazing aromatics of green herbs, floral with some jasmine scents and a hint of fennel. On the palate the wine is full and flavoursome. The crisp acid lifts the wine and showcases some saline characters along with melon and fleshy peach. I bloody love this wine and may drink it all myself!
